I try to cook on week nights and we usually go out on Friday and/or Saturday nights for dinner. Sunday I make a big family meal. I’m kinda jealous as my Dear Husband hates aubergine, so I only get to eat it when he’s away on business trips. If you haven’t got butter, corn is also good with lime juice and a sprinkling of chili powder. If you like you can also add cilantro leaves and a bit of cotija cheese, like in Mexican restaurants.
The more you meal plan the easier it gets over time. So even if you don’t start out doing every week, keep trying. I also find that I like to have a running list of sorts. That way if I see something in the market that is “in season” or I have an idea in the middle of the week for a meal, I just write it down on the list right then and will get it the next trip to the market. After a while you’ll even be able to cook most of your meals without a recipe book.

It’s really hard for me to decide whether meal planning is beneficial for me. But, I think I agree with the decision you guys came to, that I’ll do it for some days of the weeks and not others or I’ll have some meals prepped, but not assigned to certain days.

I tend to cook more in bulk and freeze portions or plan meals with similar ingredients/invent meals which seems to work! I thoroughly recommend making the most of your freezer, we buy frozen veg like soya beans/peas, which are easy to add to things, we also freeze tortellini/ravioli for emergency meals…hope some of this is helpful?!
