3 DELICIOUS WAYS TO USE KALE

 I am not one of those healthy, watch what you eat kinda girls, so if you’re like me don’t let the title of this post put you off. I hadn’t really ever considered trying kale… it’s bright green, quite rough in texture and just looks like it’s going to taste horrible. One day I tried roasted kale and have been obsessed ever since. I wanted to share with you a few ways I use kale as it’s a great source of Vitamin C and K. It’s generally a bit of a super food and I’ve been reading up on it in the Neal’s Yard Healing Foods book. There are a few different types of kale but for my these recipes I used curly kale. 

CRISPY ROASTED KALE //

This has easily become my favourite snack. It tastes just like crispy seaweed that you get with Chinese takeaway but it’s not bad for you because it’s not deep fried. Remove the ribs from the kale, roll them up and chop them finely. Lay them onto a baking tray, cover them with olive oil and roast for 8-9 minutes on the highest temperature. Watch it carefully as it can easily burn! When it’s nice and crisp, take it out and cover with a bit of salt and light brown sugar. Yum! It lasts well and tastes good  even when it’s cold. 

KALE JUICE // 

I always stay well away from the green juices… they just look wrong, but I am a big fan of juicing so I tried to use Kale with my usual favourite juice combination. I used two apples, two carrots, two celery sticks and then about half a bag of kale. It tasted absolutely delicious with only a slight aftertaste of kale that I actually really liked. 

KALE PESTO //

Making your own pesto is really easy, I usually follow a Jamie Oliver recipe, but I never really thought about substituting the basil for anything else. When I made it this time I did everything as standard but swapped basil for kale and I was so happy with the results. It tasted delicious, even better than usual and it was extra healthy!
